I recently saw a recipe on Florassippi Girl for Jack-o-Lantern Quesdillas and we decided to give it a try at our house tonight! So, my kiddos and to be honest myself too are not fans of refried beans, so we altered the recipe some to fit out family. Here is our version of Jack-O-Lantern Quesdilla!
(2) 8 packs of flour tortillas
Shredded Taco Cheese
2 Lbs. of browned ground beef
1 package of Taco Seasoning
Preheat oven to 375 degrees. Brown ground beef and add taco seasoning as directed on package. Cut Jack-O-Lantern face into half of the tortillas with a sharp knife. Place the other whole tortillas on greased baking sheet, then spread on taco meat mixture and sprinkle with cheese. Lastly, add a jack-o-lantern tortilla to the top and cook in the oven approx. 8-10 mins or until cheese is melted and tortilla is slightly browned. Enjoy your Halloween themed dinner!
